  • 1 lb (450g) ground beef (85% lean recommended)
  • 1 small head of green cabbage, shredded (about 5 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 oz (115g) cream cheese, softened
  • 1/2 cup (120ml) beef broth
  • 1/4 cup (60ml) sour cream
  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • Optional: fresh parsley or chives for garnish

Instructions

  1. Prep your ingredients (about 10 minutes): Dice the onion, mince the garlic, and shred the cabbage finely.
  2. Heat 2 tablespoons of olive oil or butter in your skillet over medium-high heat. Once hot, add the ground beef. Season with salt and pepper. Cook, breaking it up with your spoon, until browned and no longer pink—about 6-8 minutes. Drain excess fat if desired.
  3. Add the diced onion and minced garlic to the skillet. Sauté together with the beef for 3-4 minutes until the onion is translucent and fragrant.
  4. Stir in the shredded cabbage. Cook for about 6-8 minutes, stirring often, until the cabbage softens but still has a bit of bite.
  5. Sprinkle in the smoked paprika and dried thyme. Stir well to coat the mixture evenly.
  6. Pour in the beef broth and stir. Let it simmer gently for 3-4 minutes until slightly reduced.
  7. Reduce heat to low and add the softened cream cheese and sour cream. Stir continuously until everything melts into a creamy, luscious sauce.
  8. Taste and adjust seasoning with more salt and pepper if needed.
  9. Remove from heat and sprinkle chopped fresh parsley or chives on top for garnish.

Notes

Use room temperature cream cheese for smooth blending. If cabbage isn’t tender enough, cover skillet for a few minutes to steam. Add more broth if sauce is too thick. Avoid overcrowding the pan to brown beef properly. Fresh cabbage is preferred over frozen for best texture.
