  • 1/2 cup (100 g) granulated sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (60 ml) sour cream
  • 12 fresh medium strawberries, hulled and dried thoroughly
  • 1 cup (175 g) semi-sweet chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil or vegetable oil
  • Optional garnishes: chopped nuts, shredded coconut, or sprinkles

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Hull and dry the strawberries thoroughly with paper towels.
  3. In a medium bowl, beat 8 oz softened cream cheese and 1/2 cup granulated sugar until smooth and creamy, about 2-3 minutes using an electric mixer on medium speed.
  4. Beat in 1 large room-temperature egg, 1/2 teaspoon vanilla extract, and 1/4 cup sour cream until fully combined.
  5. On a parchment-lined baking sheet, spoon a small dollop (about 1 tablespoon or 15 ml) of cheesecake batter for each stick. Gently press a strawberry, pointed end up, into each cheesecake dollop so it sticks well. Smooth the batter around the berry if needed.
  6. Place the baking sheet in the oven and bake for 18-20 minutes. The edges should be set but the center may jiggle slightly.
  7. Remove from the oven and let cool on the baking sheet for 10 minutes. Then transfer to a wire rack and chill in the fridge for at least 2 hours or overnight.
  8. In a microwave-safe bowl, combine 1 cup semi-sweet chocolate chips and 1 teaspoon coconut oil. Microwave in 20-second bursts, stirring in between, until smooth and glossy.
  9. Using toothpicks or small skewers, dip each chilled cheesecake-strawberry stick into the melted chocolate, swirling to coat evenly. Let excess chocolate drip off, then place back on parchment paper.
  10. Before the chocolate sets, sprinkle with optional chopped nuts, shredded coconut, or colorful sprinkles.
  11. Chill the dipped sticks in the fridge for 15-20 minutes until the chocolate hardens.
  12. Serve chilled or bring to room temperature for a few minutes before serving.
