  • 1 cup (240g) vanilla Greek yogurt
  • 1 tablespoon honey or sugar (optional)
  • ½ cup (115g) unsalted butter, softened
  • ⅓ cup (75g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • ½ cup (65g) heat-treated all-purpose flour
  • ½ cup (90g) mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the flour evenly on a baking sheet and bake for 5 minutes. Let it cool completely before using.
  2. In a mixing bowl, cream together ½ cup (115g) unsalted butter and ⅓ cup (75g) brown sugar until smooth. Add ¼ cup (50g) granulated sugar and continue mixing until fluffy.
  3. Add ½ teaspoon vanilla extract and a pinch of salt. Mix until combined.
  4. Gradually add the cooled, heat-treated ½ cup (65g) all-purpose flour, mixing until smooth.
  5. Fold in ½ cup (90g) mini chocolate chips. Set aside.
  6. In a separate bowl, mix 1 cup (240g) vanilla Greek yogurt until smooth. You can add a tablespoon of honey or sugar if you want extra sweetness.
  7. Line a baking sheet with parchment paper. Scoop small dollops of cookie dough (about 1 teaspoon each) and flatten slightly. Add a small dollop of yogurt on top of each cookie dough piece.
  8. Place the baking sheet in the freezer and let the bites freeze for 2-3 hours, or until firm.
  9. Once frozen, transfer the bites to an airtight container and store in the freezer. Enjoy them straight from the freezer for a cool, creamy treat!
