Ingredients

  • Elbow macaroni
  • Unsalted butter
  • All-purpose flour
  • Whole milk
  • Heavy cream
  • Cheddar cheese
  • Colby-Jack cheese
  • Parmesan cheese
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to remove the raw flour taste.
  4. Slowly pour in the milk and heavy cream, whisking constantly to prevent lumps. Continue whisking until the mixture begins to thicken, about 4-5 minutes.
  5. Reduce the heat to low and stir in the cheddar, Colby-Jack, and Parmesan cheese. Mix until the cheese is completely melted and the sauce is smooth.
  6. Season the sauce with salt, pepper, and paprika. Taste and adjust seasoning as needed.
  7. Combine the cooked macaroni with the cheese sauce, stirring until evenly coated.
  8. Transfer the mac and cheese to the prepared baking dish. Spread it out evenly and sprinkle a little extra cheddar cheese on top for that golden crust.
  9. Bake uncovered for 15-20 minutes, or until the top is bubbly and lightly golden brown.
  10. Remove from the oven and let it rest for 5 minutes before serving. Enjoy!
