  • 4 cups low-sodium vegetable broth or chicken broth
  • 1 tablespoon Cajun spice mix (paprika, cayenne, garlic powder, onion powder, oregano, thyme, black pepper)
  • 1/2 cup heavy cream (optional; use coconut cream for dairy-free)
  • 2 tablespoons chopped fresh parsley or thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Dice the onion, celery, and carrot finely. Mince garlic and rinse and drain white beans if canned.
  2. Place 6 tablespoons unsalted butter in a pot over medium heat. Stir constantly until butter foams and turns golden brown with nutty aroma. Remove from heat to avoid burning.
  3. Add 1 tablespoon olive oil to the brown butter. Add diced onion, celery, and carrot. Cook over medium heat, stirring often, until vegetables soften and onions turn translucent. Add minced garlic in the last 1-2 minutes.
  4. Sprinkle 1 tablespoon Cajun spice mix over the vegetables and stir well. Add white beans and stir gently to combine.
  5. Pour in 4 cups broth and bring to a gentle boil. Lower heat and simmer uncovered for 20-25 minutes to meld flavors and thicken soup slightly.
  6. Optional: Use an immersion blender to puree half or all of the soup for a creamy texture. Alternatively, blend half in a blender and return to pot.
  7. Stir in 1/2 cup heavy cream and add fresh chopped parsley or thyme. Adjust seasoning with salt and pepper.
  8. Ladle soup into bowls and serve warm with crusty bread or a fresh green salad.

Notes

Watch the butter closely when browning to avoid burning. Add garlic at the end of sautéing to prevent bitterness. Adjust Cajun spice to taste. If soup is too thick after simmering, add broth or water to loosen. For vegan version, use plant-based butter and coconut or almond milk instead of heavy cream.
