  • 2 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces button or cremini mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 12 ounces egg noodles, cooked according to package instructions
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips, season with salt and pepper, and sear for 2-3 minutes per side until browned. Remove from the skillet and set aside.
  3. Add 2 tablespoons of butter to the skillet. Sauté the chopped onions and minced garlic for 2-3 minutes until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they release their moisture and start to brown.
  5. Sprinkle 2 tablespoons of flour over the mushroom mixture and stir to coat evenly. Cook for 1 minute to eliminate the raw flour taste.
  6. Gradually pour in the beef broth while stirring to create a smooth sauce. Bring to a gentle simmer and cook for 5 minutes until slightly thickened.
  7. Reduce the heat to low and stir in the sour cream and Dijon mustard. Mix well until the sauce is creamy and smooth.
  8. Return the beef to the skillet and let it simmer in the sauce for 2-3 minutes to heat through.
  9. Serve the beef stroganoff over the cooked egg noodles. Garnish with fresh parsley.

Notes

For added flavor, use fresh mushrooms and high-quality beef. Substitute Greek yogurt for sour cream or use gluten-free noodles if needed. Adjust seasoning to taste and stir the sauce continuously to avoid lumps.
