These easy, 5-ingredient cranberry brie puff pastry bites are a crowd-pleasing party appetizer featuring flaky pastry, creamy brie, and tangy cranberry sauce. Perfect for holidays, potlucks, or any festive gathering.

Ingredients

Scale
  • 2 sheets (16 oz) frozen puff pastry, thawed but cold
  • 8 oz brie cheese, cut into 24 small cubes
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Lightly grease a 24-cup mini muffin tin.
  2. Remove puff pastry sheets from box and let thaw for about 20 minutes until just pliable but still cold.
  3. Unfold each pastry sheet onto a lightly floured surface. Cut each sheet into 12 equal squares (24 squares total, about 2.5×2.5 inches each).
  4. Gently press each pastry square into the wells of the muffin tin, letting the corners stick up.
  5. Place a cube of brie into the center of each pastry cup.
  6. Add about 1 teaspoon cranberry sauce over each brie cube.
  7. Brush the exposed pastry corners lightly with beaten egg.
  8. Bake for 15-18 minutes, or until the pastry is puffed and deep golden brown.
  9. Let bites cool in the tin for 3-5 minutes, then transfer to a cooling rack.
  10. Sprinkle with fresh thyme leaves if desired and serve warm or at room temperature.

Notes

Keep puff pastry cold for best results. Don’t overfill with cheese or cranberry to avoid overflow. You can prep ahead and refrigerate before baking. For gluten-free, use GF puff pastry. Variations include swapping jams, cheeses, or adding nuts. Serve warm for maximum crispness.
