A comforting and hearty soup made with savory sausage, creamy potatoes, and simple ingredients, perfect for chilly days and family gatherings.

Ingredients

Scale
  • 1 pound ground sausage (hot or mild, spicy Italian sausage recommended)
  • 4 russet potatoes, peeled and diced
  • 1 onion, diced (yellow onion preferred)
  • 2 carrots, sliced into rounds
  • 2 celery stalks, chopped
  • 4 cups low-sodium chicken broth (or vegetable broth for vegetarian adaptation)
  • 1 cup heavy cream (or coconut cream for dairy-free option)
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Peel and dice the potatoes, slice the carrots, chop the celery, and dice the onion. Mince the garlic.
  2. Heat a skillet over medium heat and cook the sausage until browned (optional). Drain excess grease and set aside.
  3. Layer the potatoes, carrots, celery, onion, garlic, and sausage into your slow cooker.
  4. Sprinkle in the thyme, salt, and pepper. Pour the chicken broth over the ingredients.
  5. Cover and set your slow cooker to low for 6-7 hours or high for 3-4 hours until the vegetables are tender.
  6. Stir in the heavy cream during the last 30 minutes of cooking.
  7. Ladle into bowls and garnish with fresh parsley. Serve warm.

Notes

Browning the sausage before adding it to the slow cooker enhances the flavor. Adjust seasoning halfway through cooking. If the soup is too thick, add a splash of broth; if too thin, mash some potatoes to thicken.
