  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (180g) pure pumpkin puree
  • Optional add-ins: 1/2 cup chopped pecans, 1/2 cup dried cranberries, or 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a mixing bowl, whisk together oats, flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a separate large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until fully combined.
  5. Add pumpkin puree to the wet mixture and stir until well mixed.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
  7. Fold in any optional add-ins like pecans, cranberries, or chocolate chips.
  8. Using a cookie scoop or spoons, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the tops look set.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
