  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup (240g) pumpkin puree
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, then line it with parchment paper for easy removal.
  2. In a large bowl, whisk together 1 ¾ cups (220g) of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, 1 teaspoon of ground cinnamon, ½ teaspoon of nutmeg, and ¼ teaspoon of ground cloves. Set aside.
  3. In another bowl, whisk together 1 cup (240g) of pumpkin puree, ½ cup (120ml) of vegetable oil, 2 large eggs, 1 teaspoon of vanilla extract, ½ cup (100g) of granulated sugar, and ½ cup (100g) of brown sugar until smooth.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Be gentle to avoid overmixing. The batter should be thick and smooth.
  5. Transfer the batter into the prepared loaf pan, spreading it evenly with the spatula.
  6. Place the pan in the oven and bake for 50-60 minutes. The bread is done when a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack.
  8. Once cooled, slice the bread and enjoy with a pat of butter or a drizzle of maple syrup!
