Cozy Maple Dijon Pork Chops Recipe with Roasted Apples

A quick and easy weeknight dinner featuring pork chops glazed with a sweet and tangy maple Dijon sauce, roasted alongside tender, caramelized apples for a cozy, comforting meal.

  • 4 bone-in pork chops (about 1-inch thick, center-cut preferred)
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 medium apples (such as Honeycrisp or Fuji), cored and sliced into wedges
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • Optional: 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small mixing bowl, whisk together maple syrup, Dijon mustard, minced garlic, salt, pepper, and apple cider vinegar if using. Set aside.
  3. Pat pork chops dry with paper towels and season generously with salt and black pepper on both sides.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering.
  5. Add pork chops and sear without moving for 3-4 minutes until golden brown on the first side.
  6. Flip chops and brush the maple Dijon glaze generously on the cooked side, then brush the other side once seared.
  7. Transfer pork chops to a baking sheet or ovenproof pan.
  8. Arrange apple wedges around the chops, drizzle lightly with olive oil, sprinkle with thyme leaves, and season with salt and pepper.
  9. Roast in the oven for 10-12 minutes, or until pork reaches an internal temperature of 145°F (63°C) and apples are tender with caramelized edges.
  10. Remove from oven and let pork rest for 5 minutes to redistribute juices.
  11. Serve pork chops topped with roasted apples and pan juices drizzled over. Enjoy warm.

Notes

Pat pork chops dry before seasoning to ensure a good sear. Do not overcrowd the pan to avoid steaming. Brush glaze after flipping chops to prevent burning. Let pork rest 5 minutes after cooking for juicy meat. Add a splash of water or apple juice if glaze thickens too much. Use a meat thermometer to check doneness at 145°F (63°C).
