  • 2 cups butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 medium apples, peeled, cored, and diced
  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar
  • 1 baguette, sliced into rounds
  • 1/4 cup olive oil
  • Balsamic glaze
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. Toss the diced butternut squash with olive oil, cinnamon, nutmeg, salt, and pepper in a mixing bowl. Spread evenly on the baking sheet and roast for 20-25 minutes, stirring halfway through, until soft and slightly caramelized.
  3. Brush baguette slices with olive oil on both sides. Arrange them on another baking sheet and toast in the oven for 6-8 minutes, flipping halfway, until golden and crispy.
  4. In a small sautΓ© pan, melt butter over medium heat. Add diced apples and sprinkle with brown sugar. Cook for 5-7 minutes, stirring occasionally, until softened and caramelized.
  5. Spoon roasted squash onto each slice of toasted bread, followed by caramelized apples.
  6. Drizzle balsamic glaze over the top and garnish with fresh thyme or rosemary, if desired.
