  • 1 lb Italian sausage (mild or spicy)
  • 4 medium Yukon Gold or Russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh kale, roughly chopped
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up with a wooden spoon. Remove and set aside.
  2. In the same pot, add onion and sautΓ© for 3-4 minutes until softened. Add garlic and cook for another minute until fragrant.
  3. Pour in chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a simmer.
  4. Add diced potatoes and cook for 15-20 minutes, or until tender.
  5. Reduce heat to low and stir in heavy cream. Return the sausage to the pot and add chopped kale. Cook for 5 minutes until the kale is wilted.
  6. Season with salt, pepper, Italian seasoning, and red pepper flakes to taste.
  7. Serve hot, garnished with grated Parmesan cheese.
