  • 1 cup shredded cheddar cheese
  • 1 cup Greek yogurt
  • 1 cup vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish lightly with olive oil or cooking spray.
  2. Prepare 2 cups of rice according to package instructions, or use leftover rice.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, cooking until fragrant and softened, about 3-4 minutes.
  4. Add the broccoli florets and sauté for another 5-7 minutes, until they’re bright green and slightly tender.
  5. In a mixing bowl, whisk together the Greek yogurt, vegetable broth, paprika, black pepper, and cayenne for a creamy, flavorful base.
