  • 1 lb ground beef (80/20 blend)
  • 68 slices bacon, cooked and crumbled
  • 1 medium onion, finely chopped
  • 1/2 cup BBQ sauce
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots (approx. 32 oz.)
  • Pickles, optional, sliced for garnish
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Cook the bacon in a skillet until crispy. Remove, crumble, and set aside. Drain excess grease but leave about 1 tablespoon in the pan.
  3. Add the chopped onion to the skillet and sautΓ© until softened, about 3-4 minutes.
  4. Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula as it cooks. Season with salt and pepper.
  5. In a small bowl, mix the BBQ sauce, ketchup, and mustard. Pour this mixture over the cooked beef and stir to combine.
  6. Grease your baking dish lightly with cooking spray. Spread the beef mixture evenly across the bottom.
  7. Sprinkle the crumbled bacon over the beef layer.
  8. Top with shredded cheddar cheese, spreading it evenly.
  9. Arrange the frozen tater tots in a single layer on top of the cheese.
  10. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
  11. Optional: Garnish with sliced pickles and chopped parsley before serving.

Notes

Let the casserole rest for 5 minutes after removing it from the oven to allow the layers to set. Customize the flavors with different cheeses or BBQ sauces, and make it ahead for convenience.
