Instructions

  1. Preheat oven to 225Β°F (110Β°C). Line two baking sheets with parchment paper.
  2. Ensure mixing bowl and beaters are clean and grease-free (wipe with vinegar if needed).
  3. Carefully separate 4 large eggs, placing the whites into the mixing bowl.
  4. Add a pinch of salt and beat egg whites on medium speed until frothy (1-2 minutes).
  5. Sprinkle in cream of tartar and continue beating on medium-high until soft peaks form (2-3 minutes).
  6. With mixer running, gradually add sugar, one tablespoon at a time, until glossy, stiff peaks form (5-7 minutes).
  7. Mix in vanilla extract on low speed just until combined.
  8. Spoon or pipe meringue onto prepared baking sheets in tablespoonfuls or desired shapes, about 2 inches apart.
  9. Decorate with holiday sprinkles or crushed peppermint if desired.
  10. Bake for 1 hour. Do not open the oven during baking.
  11. Turn off oven and let cookies cool inside for 30 minutes.
  12. Remove cookies and transfer to wire rack. Cool completely before storing in an airtight container.
