These chewy no-bake trail mix granola bars combine toasted nuts and a rich brown sugar glaze for a quick, wholesome snack perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups rolled oats (old-fashioned for best chewiness)
  • 1 cup trail mix (a mix of nuts, seeds, and dried fruits; almonds, cashews, pumpkin seeds, dried cranberries preferred)
  • ½ cup unsalted peanuts or chopped walnuts
  • ½ cup mini chocolate chips or cacao nibs (optional)
  • ½ cup brown sugar, packed (light brown sugar recommended)
  • ¼ cup unsalted butter (softened, not melted)
  • ¼ cup honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Optional add-ins: chia seeds or flaxseeds, shredded unsweetened coconut, protein powder

Instructions

  1. Line a 9×9 inch pan with parchment or wax paper, leaving an overhang for easy removal. (5 minutes)
  2. In a large bowl, combine rolled oats, trail mix, chopped nuts, and mini chocolate chips if using. Stir gently to distribute evenly. (3 minutes)
  3. In a microwave-safe bowl or small saucepan, add brown sugar, softened butter, and honey or maple syrup. Heat gently, stirring every 15 seconds in the microwave or constantly on the stove, until smooth and bubbling slightly. Remove from heat and stir in vanilla extract and salt. (5 minutes)
  4. Pour the warm glaze over the dry ingredients and stir quickly but thoroughly until everything is coated and glossy. (2 minutes)
  5. Transfer the mixture into the lined pan. Press firmly and evenly into the pan using a spatula or lightly greased/wet hands. (5 minutes)
  6. Place the pan in the refrigerator for at least 2 hours or until bars are firm and set. (2 hours minimum)
  7. Lift the bars out using the parchment overhang and slice into 10–12 bars with a sharp knife. Warm the knife blade under hot water and dry before slicing for cleaner cuts. (5 minutes)
