  • 10 ounces fresh baby spinach (or frozen, thawed and drained)
  • 14 ounces canned artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened (full-fat recommended)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise (can substitute Greek yogurt)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Cajun spice blend
  • 2 cloves garlic, minced
  • 12 slices thick-cut bacon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the baby spinach until wilted, about 3-4 minutes. If using frozen spinach, ensure it is thawed and well-drained. Set aside to cool slightly.
  3. Drain and chop the artichoke hearts into bite-sized pieces.
  4. In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Beat until smooth and creamy.
  5. Stir in Parmesan cheese, shredded mozzarella, Cajun spice blend, minced garlic, salt, and pepper.
  6. Fold in the cooled spinach and chopped artichokes until evenly combined.
  7. Spread the dip mixture evenly into an 8×8-inch oven-safe baking dish or skillet.
  8. Lay the bacon slices across the top, slightly overlapping and tucking the ends down the sides of the dish.
  9. Bake for 25-30 minutes until the bacon is crispy and the dip is bubbling. Rotate halfway through baking for even crisping.
  10. Let the dip rest for about 5 minutes before serving.

Notes

Wilt the spinach to reduce moisture and prevent a watery dip. Use thick-cut bacon for better shape and crispiness. Let the dip rest after baking to set and meld flavors. If bacon isn’t crisping well, broil for last 2-3 minutes watching carefully. Can prepare ahead and refrigerate up to 24 hours before baking, adding extra baking time if cold. Freeze unbaked dip for up to 1 month.
