  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 can (12.4oz) refrigerated cinnamon rolls with icing
  • 1 tablespoon unsalted butter, melted
  • Vanilla ice cream, for serving
  • Extra cinnamon sugar, for sprinkling (optional)

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Peel, core, and slice apples into 1/2-inch thick pieces.
  2. In a large mixing bowl, toss apples with sugar, flour, cinnamon, nutmeg, lemon juice, and salt until evenly coated.
  3. Pour apple mixture into a greased 9×13-inch baking dish and spread evenly.
  4. Open the can of cinnamon rolls, separate, and arrange on top of the apples. If using jumbo rolls, cut in half and nestle closer together.
  5. Brush cinnamon rolls lightly with melted butter.
  6. Bake for 35-40 minutes, until cinnamon rolls are golden and apple filling is bubbling. If rolls brown too quickly, cover loosely with foil for the last 10 minutes.
  7. Check for doneness: apples should be fork-tender, rolls soft but set.
  8. Remove from oven and let cool for 5 minutes. Drizzle included icing over cinnamon rolls while warm.
  9. Serve warm cobbler in bowls, topped with vanilla ice cream and a sprinkle of cinnamon sugar if desired.

Notes

For gluten-free or dairy-free adaptations, use gluten-free flour and cinnamon rolls, and plant-based butter and ice cream. Let cinnamon rolls sit at room temperature for 10 minutes before baking for a puffier topping. If apples are too firm after baking, cover with foil and bake an extra 5-10 minutes. Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month.
